Lemon Poppyseed Crepes with Blueberry Compote

I am super excited to share with you one of the products I first mentioned in the monthly blog series, Women Who Inspire. The post was all about my experience at Expo West, the world’s largest natural products expo. I was able to meet with a lot of wonderful people, including Debbie Thornberg of ProBiotein® . We hit it off instantly, talking food and science.

With a degree in biology, I am a woman of STEM before they made it fashionable and trendy. Science nerd alert! I am fancinated with the way the body works. Over the last few years, we have been learning more and more about the importance of gut health and inflammation to overall body health. So what does all this have to do with Lemon Poppyseed Crepes? After talking with Debbie, I wanted to try adding ProBiotein® into every day recipes. The best way to improve your gut health is with a healthier diet. That isn’t always the eaiest, or frankly tastiest, way.

Fermented foods aren’t everyone’s jam. You know I like cheese, yogurt, kombucha and miso, but that’s what I really liked about Probiotein®. The powder is easy to add into many of the things I already make, like my morning protein smoothies. I also wanted to find other ways to add the powder to other recipes. Seriously, as a mom and wife, if I can “hide” healthy things in tasty treats I make everyone happy….and their gut too 🙂

Lemon Poppyseed Crepes are a lot easier to make than most people think. You don’t need any fancy equipment, a medium-sized non-stick cooking pan works great. Crepes already have butter in them (or coconut oil) so I rarely spray my pan with a cooking spray. My pan is nice an shallow and is wonderful for omelets as well.

While my husband was using the wafflemaker to create two waffles using the same batter, I made six crepes. What I love about crepes is that you can make them ahead of time and simply store them in the fridge with each layer separated by wax paper. Easy-peasy to put them together the next morning. This is what I do with the blueberry compote and my favorite lemon curd.

You can also make the batter the night before and simply pour it into your wafflemaker or make pancakes or crepes in the morning. That’s what I did today. Simply cook, fill and eat this yumminess peeps!

Lemon Poppyseed Crepes with Blueberry Compote

  • Servings: 4-6

A refreshing combination of flavors that will bring a smile to everyone's faces!

Ingredients

    Blueberry Compote
  • 2 cups fresh blueberries
  • 1 1/2 tablesppons fresh lemon juice
  • 1 teapooon lemon zest
  • 2 teaspoons cornstarch (optional, see instructions)
  • 2 tablespoons water
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • Lemon Poppyseed Crepes
  • 1 cup all-purpose flour*
  • 1/2 cup whole-wheat flour
  • 2 Tbsp Probiotein powder
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon poppy seeds
  • 1/3 cup fresh squeezed lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons honey
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1 cup milk (or milk substitute)
  • 1 teaspoon vanilla extract

Directions

    Blueberry Compote
  1. Heat blueberries and water in a small saucepan over medium-low heat.
  2. Once blueberries start to break apart, add remaining ingredients. Let is simmer 5-10 minutes or until most of the liquid has evaporated and sauce has thickened. If you are using frozen blueberries, dissolve the cornstarch into the lemon juice before adding to the simmering blueberries.
  3. Once thickened, remove from heat and let cool. Transfer to a covered container and refrigerate until serving.
  4. Lemon Poppyseed Crepes
  5. In a medium bowl mix together dry ingredients, set aside.
  6. In a separate bowl, whisk together wet ingredients.
  7. Combine wet ingredients with dry ingredients and blend until smooth.
  8. Into a pre-heated non-stick cooking pan with stove set at medium-low heat, pour 1/3 cup of the batter and immediately swirl in a circular pattern to cover bottom of pan in a thin layer of batter. Cook until the edges start to turn a light brown and pull away from the pan, about 1-2 minutes. Gently lift crepe and flip it. Cook only about 20-30 seconds on this side. Set aside on your plate. Repeat until all batter is used, separating each layer with waxed paper.
  9. Fill and serve immediately or store in the fridge.

Your crepes should be a beautiful light brown on one side and light color on the other with little to no browning. You can choose which side to fill. I like to use the browned side to fill as it doesn’t get soggy as quick. Just FYI, to avoid over browning your crepes, you can lower your heat after the first crepe is made and if needed run the bottom of your pan in cool water between each crepe to cool it down.

Today, I also used the homemade lemon curd from my Lemon Berry Tart recipe to smear on my crepes before filling for an added punch of lemony goodness.


For fillings you can use yogurt, whipped cream or nothing at all. It is really all up to you. I like to add yogurt, more fresh berries and top with the blue berry compote. Obviously, if you are looking to cut the sugar levels, eliminate or replace the fillings and toppings.

*For an added protein plus, I substitute a 1/4 cup – 1/2 cup of the all-purpose flour with my favorite vanilla protein powder.

    1. Right? Maybe I should say healthy-ish. Adding the compote and lemon curd give me the extra flavor punch, but I loved that I could add all those prebiotics to an recipe making it healthier !
